Greener pastures are just around the corner, with Lupo chef Scott Pickett set to launch new Italo-Australian eatery Pastore in Chadstone this spring.
Named after the Italian word for ‘shepherd’, the new venue will group together both Italian and Australian offerings, with dishes like house-cured duck prosciutto with Davidson plum and Geraldton wax, wood-roasted king prawns with fermented tomato and fennel pollen, and pici pasta strands tossed through with sausage and salted ricotta.
The dish to order is set to be a 35-day dry-aged bistecca alla Fiorentina (800g), prepared traditionally over a wood fire. Located within the Chadstone Hotel, diners won’t need to look far for somewhere to sleep off the meat coma.

The wine list, curated by Clint Fox, will focus on Italian varietals from local producers, with plenty of premium pours thanks to an in-house Coravin system. An extensive cocktail menu will consist of Italian aperitivo spirits mixed with Australian botanicals.
Pastore will debut its luxurious dusty pink and brass fit-out when the restaurant opens on November 1.
