Sean Connolly launches The Wild Flower Bar + Dining at Bells at Killcare

Five-star luxury resort, Bells at Killcare, has just landed a new European bistro by celebrity chef Sean Connolly. Called The Wild Flower Bar + Dining, the luxe new offering takes over from former restaurant, Bells, which occupied the site for 12 years.

Sean Connolly is known for his mini restaurant empire which includes six venues across the United Arab Emirates, New Zealand and Australia, including The Morrison in Sydney and nearby Gosford hot spot, The Bon Pavilion.

Sean has teamed up with Bon Pavilion chef, Tony Gibson, to refresh the Bells menu, broadening the venue’s scope from Italian to modern European. Diners can expect bistro classics from steak tartare to a 1kg aged bistecca grilled over grapevines. Seafood will be sourced locally from Hardy’s Bay, with a whole salt-crusted fish cracked at the table. The dining experience has also become more immersive with the start of a trolley service, as well as fresh pastas tossed tableside.

To correspond with the new culinary direction, the interiors have also been given a revamp, with inspiration coming from its leafy location near Bouddi National Park. The dining room has been decked out in a specially-commissioned Kate Swinton wallpaper, alongside handmade ceramics and bespoke bell-shaped light fittings woven from Killcare grass.
