Warren Burns and James Bradey of Liquid & Larder (formerly 8 Hospitality) are moving away from drinking dens and into dining venues with their first restaurant shortly to make its debut. Part of the team behind Grandma’s, Wild Rover and Wilhelmina’s, they have confirmed that they will soon welcome a new Italian steak restaurant into Bridge Street in Sydney’s CBD.
Bistecca Restaurant, Bar and Wine Shop will embrace Italian food, wine, and tradition with an eatery that focuses on the Tuscan-style steak of the same name. Meat will be cut and weighed table side, before being cooked over an open hearth. Accompanying the steak will be a daily vegetarian dish and a series of sides, from potatoes laden with garlic and rosemary to wilted greens. Head chef Pip Pratt will be taking charge of the kitchen, fresh from Sydney’s Bentley Restaurant & Bar, and Club Gascon in the UK.
And while Bistecca Restaurant, Bar and Wine Shop may be an eatery, that’s not to say that the new venue will scrimp on its drinks offering. In fact, Bistecca will have a wine list that numbers in the hundreds, with many drops either imported from Italy or crafted from Italian varietals. The idea will be that customers will be able to wander through to the shop to purchase a bottle to accompany their meal, with wine to be served in tumblers as is typical of Italy. A classic Italian-style cocktail bar will also greet customers at the venue’s entrance on Dalley Street.
