Pull up at seat at Melbourne's best omakase restaurants

It’s the big O of Japanese dining and Melbourne’s latest food trend crush. Omakase, directly translated, means “I leave it up to you” (the “you” in this instance being the chef) but that sells this uniquely Japanese experience short. Omakase is dinner as an event, with counter seats – normally 10 to 14 – more like a ringside position to watch a chef pursue perfection. The emphasis can be on sushi, or wagyu, or something else entirely, so do your homework before committing to a singular treat.  And a word of advice to those always running late for dinner. An omakase menu waits for no one, so make sure you arrive before your designated time and strap in for a culinary journey to Tokyo and back.
