Since Sydney’s late-night credentials have been reissued the city is slowly rebuilding our after-hours stamina to the peak performance of pre-lockouts and lockdowns. As late-night bars lead the charge we’ve seen events such as a 36-hour launch for the revived Abercrombie; a six-week pop-up party in an abandoned cinema; and the awarding of the first 4am licence in 100 years to a forthcoming Newtown venue. If you are looking to raise your supper game, head to these five Sydney venues that are catering to the night owls who aren’t quite ready to head home yet.

Jimmy's Falafel

The fastest way to the late night vibes of Beirut without international flights is a Friday or Saturday night at this jumping Middle Eastern diner on George Street. They do pita wraps that garner weekday lunch queues, but one in particular stands out for its take-no-prisoners approach to flavour: the late night edition. This wrap will give flagging spirits a lift at all hours of the day or night. The base layer is lamb kafta punched up with garlicky toum. Old Town On Dixon

When it comes to late-night dining we have a way to go before we can emulate the famous eating scenes of major Asian hubs such as Singapore, Bangkok and Seoul. But Old Town On Dixon is channeling some of Hong Kong’s famous nightlife to Dixon Street in Chinatown for yum cha favourites, platters of Peking duck baos, soups, noodles and stir-fries. They also have a sizeable vegetarian selection for nocturnal herbivores; market price seafood if you’re celebrating; and deep-fried ice cream and mango pancakes for dessert. 10 Dixon St, Sydney; oldtownondixon.com.au.

Restaurant Hubert

This cavernous, underground French bistro is for when you want to really luxuriate in your evening repast rather than a fast fix. They recommend late diners – those without a reservation – arrive by at least 10.30pm so that you have a chance to properly peruse the menu (especially their famously lengthy wine list). You don’t want to rush the decision between chicken fricassee and duck a l’orange, and make sure it’s a cheat day so you can finish off with their famous creme caramel. 15 Bligh St, Sydney; swillhouse.com.

Big Poppas

Oxford Street’s two-storey Italian party palace is one of those rare gems in the city that serves food until late every night of the week. Last orders are at 2.30am, which means you can catch the late, late showing and still retire for a cheese plate, a little pasta or maybe even some king prawns in smoked tomato butter. And you can choose your drinking speed. You have plenty of time for a full bottle of wine, but they also have a generous by the glass list, including their “Bangers” selection that you can even order by the half glass – twice the number of tastings for the same sitting. 96 Oxford St, Darlinghurst; bigpoppa.com.au.

Apollonia

At the very bottom of the four-storey, historic Hinchcliff House down near Circular Quay lies Apollonia, the Sicilian-inspired bar named in honour of Michael Corleone’s ill-fated first wife in The Godfather. Here you can keep very Italian hours thanks to their late-night licence. To facilitate good times after hours they have a food menu that kicks in after 10pm. There’s bread, olives, burrata and anchovies for chatting snacks, or if you skipped dinner, order a mortadella and mustard grilled cheese sandwich, or a kimchi toastie. 5-7 Young St, Sydney; apollonia.sydney.
