Stop the presses. (But not the ones that make truffle-infused toasties, obviously.) Redfern’s Three Williams is serving up baked triple-cream brie topped with truffles, and we don’t think that’s quite sunk in for us yet. Alongside this ambrosial dish will be a tempting, truffle-topped selection of meals from head chef Fabian Mucke’s seasonal menu. Notable mentions include an angel hair carbonara with smoked caviar and – you guessed it – truffle, and an espresso martini tiramisu with, well, you get the idea. The menu is available now, and every day until the end of truffle season.

Two of Crown Sydney’s favourite dining destinations will be bringing truffles to the fore this season. Chic Italian restaurant a’Mare will honour the season with its truffle wagyu carpaccio, delicate truffle-flavoured pastas and a particularly interesting truffle fior di latte gelato. Nearby, the truffle-forward menu at Woodcut sees truffles share the plate with burrata; a southern rock lobster served with truffle butter, a glam mac ‘n’ cheese made special with the umami-rich tuber, and more. Both restaurants will feature Western Australian Manjimup black truffles.

Teaming up with Two Providores, NOMAD restaurant is set to host a breakfast to honour the not-so humble truffle on Saturday 3 July. What can you expect to see on the table? Executive chef Jacqui Challinor and head chef Sam McCallum have prepared a morning of delights with a three-cheese and truffle manoush, a ham hock and truffle hash brown, wood-roasted mushrooms with truffle and overnight roast celeriac, a wild honeycomb with lardo, truffle and crudites, and a pecan, truffle and olive oil cookie ice-cream sandwich. Set your calendar alerts for Thursday 1 July when the Prince of York’s Sam Bull kicks off his truffle menu, featuring funghi from the Blue Mountain’s Kanimbla Valley Truffle Farm. Expect a truffle negroni on arrival, a four-course shared meal and entertainment. On Thursday 22 July, head chef Jordan McLeod will present a series of truffle-rich dishes, and on Thursday 5 August, chef Ben McRae will mark the end of the year’s harvest with a celebratory event. Sydney’s east siders need not leave their beachside domain to sample the best of Australian truffle season. Rocker Bondi will be hosting a five-course shared meal that features such flavoursome dishes as spanner crab tartlet and parmesan custard topped with truffle, a truffled garlic and thyme focaccia and risotto with Pepe Saya Butter, parmigiano reggiano and a generous helping of truffle. Let’s not forget the kipfler potatoes ‘smooshed’ in truffle butter – and, saving the best to last – a Basque-style cheesecake with truffle honey and rhubarb. Parramatta’s Lilymu – headed up by former Mr Wong chef Brendan Fong – is plating up a sensory feast with its truffle-centric menu during June. Making truffles the star of the show at this East Asian eatery, Brendan is serving up a yellowfin tuna with thousand-layered taro, organic soy and black truffle; wok-fried fusilli with scampi, XO, egg yolk and black truffle; a braised shiitake dish with white garlic chive and black truffle fried rice; and, to finish, a black truffle ice cream monaka.

Not only have Surry Hill’s SOUL Dining and SOUL Deli created a series of dishes featuring Robertson Truffles from the Southern Highlands, but the two venues’ teams got their hands dirty digging for the earthly treasures themselves. Executive chef Daero Lee has incorporated these truffles into his Korean-street-food-style menu at Soul Deli, while his dining menu sees both Korean and European inspiration joined in an imaginative new menu that includes a Truffle Wagyu Pot Rice.

Calling all serious truffle devotees: for two nights only, Sydney’s Bulletin Place Laneway (behind Circular Quay) will become a ‘truffle oasis.’ There’ll be a Truffle Garden Lounge, which sees a rustic, farm-style space luring in passersby with the scent of truffle creations prepared by a Michelin Star-trained chef – alongside hot truffle-infused cocktails, a truffle market stall and a truffle hunt on site (with prizes, in case truffles weren’t enough incentive already). Then there’s the farm-to-plate Truffle Masterclass for those seeking to expand their truffle-specific knowledge.
