Parlour Group – the purveyors of Sydney hotspots Riley St Garage, Surly’s and The Village Inn – have added another notch to their belt with the opening of their latest haunt Stanton & Co. The Euro-American salon will open its doors shortly in Rosebery’s The Cannery next Wednesday. It’s a venue that pays homage to the surrounding industrial district in many a facet – including its name which comes courtesy of property developer Richard Stanton who revamped the region in the early 1900s.

Executive chef Regan Porteous is at the helm of the new venue’s kitchen, which is focused on modern Australian dishes with Japanese influences. Having cut his teeth at Toko Crown Street and Tequila Mockingbird, Regan has vast experience in Sydney’s dining scene and will be fusing his knowledge with that of head chef Marcelino Papio for the new venture. “With contemporary Australian cuisine, it’s all about letting the produce speak for itself, while adding complexity through texture, technique, and tastes that play on a diner’s palate,” says Porteous.

Regan’s marriage of Australian and Japanese cuisine is heavily present throughout the menu. Dishes include the likes of a tuna tartare, puffed rice, cured egg yolk, rice cracker, as well as a Morton bay bug tempura, bottarga, ponzu mayo’ and ‘crispy pork knuckle with a seeded soy mustard. There will be two menus available – one fast, a la carte option for lunch, and a more extensive shared concept for lazy lunches and dinners.

The drinks menu is equally diverse and expected to include an impressive cocktail selection, an ‘approachable and balanced’ wine list and a contingency of craft beer selections.

Stanton & Co. was designed by Sydney architects Alexander&Co, the creatives also behind fellow Parlour Group venues Busby’s and Surly’s. “The mutual goal was to create a space that was sympathetic to the other brands and that was also respectful and careful of the Cannery’s heritage and authenticity,” explains Jeremy Bull, Principal of Alexander&Co.

The result is an open-plan kitchen and dining room, adorned with custom banquettes of solid oak and worn leather upholstery, marble back bar cabinetry and glazed brickwork forming accents. “We wanted to grow on the Parlour Group’s existing DNA and bring a sense of resolution to the space,” continues Jeremy. “To us that meant creating a sense of handmade and craftsmanship and the challenge was how to put an elegant, sophisticated menu into the envelope of a weathered old factory space where the patina was so valuable.”
