Personally, I love a fantastic glass of red wine to end the meal. Nothing caps off a great meal like finishing your palate with a glass.
Fruitful options
I had the most delicious strawberries with cream when I was at Saison in San Francisco. It was an incredible way to end the meal.
Coffee, tea or matcha
I serve coffee and tea; I am British after all. But I love a flavourful coffee to end with.
Glass houses
I prefer classic stemware for wine but, when it comes to cocktails, I appreciate creativity, so that could mean vintage glasses or modern stemware.
Full plate
At home, I love using my Bread Street and Union Street Cafe by Royal Doulton lines. Their colours make any dish pop.

In the mood
I leave the flowers and candles to my wife, Tana, but I’m fascinated with lighting. At my house in Los Angeles, I love setting the right tone at dinner parties with the light. I can even do it on my phone.
Making music
I let my son, Jack, control the playlist – he knows how to select the perfect songs for a brilliant evening. Then I let the conversation happen organically.
Snack attack
If I’m home late, it’s beans on toast and soup! Fig rolls and Twix bars are guilty pleasures. My assistant has to hide them from me.
Party trick
I have this great game called ‘Disappear’. It’s really simple. I pull my phone out of my pocket and order everyone an Uber and they disappear! It’s amazing.
