Wanderlust tends to grab a hold as soon as the cooler seasons hit Australia. Those exotic locations that offer adventure for the senses (including the tastebuds). But an expensive flight ticket abroad isn’t required for an international culinary adventure with June’s global trends issue, out today, which is a celebration of food around the globe.

The issue also marks the debut of #girlsonfire – a celebration of the ladies helping to shatter the industry’s glass ceiling. In Australia as a part of The World’s 50 Best celebrations were a collection of the globe’s most talented in cuisine – including seven of the leading lady chefs and sommeliers. Dominique Crenn, Elena Arzak, Ana Ros, Hannah Green, Analiese Gregory, Heidi Nam Knudsen, and Kylie Kwong took the time out of their busy schedules to talk their rise to the top, and the gap in gender equality in the kitchen.

Starting off the feasting frenzy is Chef Roy Ner of new Sydney hotspot Nour, who takes over Hand Picked. Following the Middle Eastern flare of his Surry Hills eatery, the chef focuses on exotic flavours and early winter produce presenting dishes from a turmeric brisket with grilled leek and dukkah to an apple and orange blossom tart with honey labneh.

The vibrant flavours of Mexican cuisines have been reworked by Phoebe Wood into vegan, gluten-free takes on latin favourites that make ideal options for your next dinner spread. No matter whether you choose to turn to fish ‘tacos’ with green veganaise and kraut, or spicy chorizo enchiladas.

Tofu shakes off its tired reputation and shows us its potential via Matt Wilkinson. The ingredient proves a versatile one, traversing recipes from tofu doughnut bites with soy milk soft serve to whipped tofu, mushroom & crispy ginger bagels.

Andrew McConnell offers a glimpse into his recently launched Melbourne eatery Ricky & Pinky where modern Chinese is on the menu. Forget what you know about your local Chinese takeaway – this is a food exploration laced with the flavours of star anise, ginger and Sichuan.

 Ex-Wallabies player David Lyons and wife Justine showcase how to host a party in Sydney’s East. The wine enthusiasts intertwine the launch of their new Champagne project French Vine with a delicate Gallic-themed dinner party with friends.

For those with a penchant for the spicier side of life, look no further than the extract from Anjum Anand’s new cookbook I Love India. The tantalising flavours of India from the traditional to the unexpected (such as a Mumbai roadside hot lamb sandwich) make for a drool-inducing read.

Long-overlooked, the bean comes back into periphery thanks to Jamie Oliver. From veggie burgers to pesto-laden spaghetti, the cooking superstar shows how to make the most of the humble pantry essential.

Charlotte Binns-McDonald turns her attention to another kitchen favourite – rice. Beloved the world over, the grain is showcased in some of its most popular dishes, from a fragrant Chinese quick brown rice duck congee to the flavoursome Malaysian fried red rice with prawns.

Honeycomb’s global appeal is explored by Samantha Coutts’ collection of desserts that celebrate the ingredient, from Portuguese tart to Middle Eastern sweet treats.

The sweet tooth is also indulged by Valli Little who turns her attention to pudding. Perfect for chilly autumnal nights, the collection of indulgent treats range in origin from the far stretches of Africa to icy Scandinavia.

Travelling lust will also be satisfied by the foodie adventures undertaken in the issue. Think as far afield as the streets of Peru, and as close to home as hidden gem Bundaberg.
