Colin Fassnidge discusses his grand plan to create a Thai-riffic salad celebrating true blue ingredients. Anthony Puharich reckons there’s too much talking and it’s time to hop to it.
Colin: Salad? Well, I would rather do a rice paper roll.
Anthony: Okay, but the thing is you do that every year in February. Let’s do something with kangaroo. It’s high in iron and minerals, it’s lean and inexpensive.
Colin: Fine then. If we’re using kangaroo, I’m going to make it a bit native. You can buy kangaroo from delicious. Produce Awards trophy winner Something Wild – as well as Victor Churchill, of course.
Anthony: Thanks mate.
Colin: We’ll make it Thai-style, so vermicelli noodles, fish sauce dressing and whatever, but I’m going to add saltbush.
Anthony: What’s wrong with your head? It could be so simple. Just high heat, bit of oil, some lovely lean kangaroo fillets…
Colin: I said I’m making it native. We can throw in some macadamia nuts.
Anthony: You’re nuts, alright.
Colin: Aussie chillies, juicy Australian tomatoes, Aussie kangaroo, of course!
Anthony: You’re not making any sense. Of course it’s Aussie. It’s here!
Colin: I obviously mean the produce that is grown here! I’d use Vietnamese mint grown here, coriander and Thai basil grown here for our Thai flavour.
Anthony: I think you just need to stop talking, mate, because you have Thai flavours, then it’s like you’re trying to put the whole of Australia in this bowl. Next you’ll be adding Davidson plum!
Colin: It’s a coalition. Our government isn’t steady so why should the salad be?
Anthony: More is better, right?
Colin: Coco Chanel said take one thing off, but we’re putting more on!
Anthony: Personally I think I’m with Chanel on this one.
Butcher’s Cut – Kangaroo
Healthy, sustainable and ethical – kangaroo ticks all the boxes.
