In this issue of delicious. on Sunday, in Stellar magazine, we chat with Aussie restaurateur Bill Granger. Famous for making brunch the star of the weekend, Granger is about to open his 17th restaurant in London’s Chelsea. In his career to date, the entrepreneur has also written 11 cookbooks and hosted five television shows. He has come a long way from opening his first eatery, Bills, in Sydney’s Darlinghurst, in 1993. Back then, he started by serving up luxurious breakfasts, becoming well-known for ricotta hotcakes and corn fritters. But his reinvention of breakfast and brunch came about by chance. “The only site anyone would give me at 24 was one with restrictive hours, from 7am to 4pm,” Granger says. The self-taught cook now lives in the UK with his wife and three daughters, and does his best to bring a little sunshine to the world through his food. “I’m always thinking about sunshine and light,” he says. “Australians live very much for the pleasure of the day to day… I’ve always celebrated our outdoors lifestyle with fresh, seasonal and simple everyday food.”
