Life has never been sweeter.

Dulce de leche fans can now breathe a sigh of relief with authentic versions of the rich caramel finally back in the country after a lengthy hiatus.

Years ago the Australian government prohibited the import of milk products from Argentina (for fear of foot and mouth disease). Unfortunately this included one of the South American nation’s most famous sweet creations, dulce de leche. But now, thanks to homegrown dessert kings Gelato Messina, authentic dulce is back. 

It’s taken years but the gelato chain believes that is has created an authentic take on the caramel. Meaning ‘sweetness of milk’ or ‘milk jam’, dulce de leche is made with a concoction of good quality milk and some sugar. The mixture is left to slowly simmer until all moisture content is extracted from the milk. While there are knock offs aplenty, Gelato Messina claim that after more than a year and a half of experimentation they have worked out just how to make dulce that is as good as you would find in Argentina.

The process of course was not an easy one. “It took a trip to Argentina, some long sessions (in broken Spanglish) with a sweet talking man called Santiago, and the installation of a brand spanking new machine called a ‘Paila’ which allows us to make our own dulce de leche,” the team at Gelato Messina explain. “Thank you Argentina for giving the world Dulce De Leche, and the sweet talking Santiago, our dulce de leche savior.”

Their caramel mix is used in-house, melded into existing creations (such as the yoghurt caramel) as well as shining as its own entity with the popular dulce de leche flavour.

It’s not the first nor the last time that Gelato Messina will be making their own treats, with the gelati house famed for its in-house bakery where with a team of gelato and pastry chefs make the mouth-watering additions thrown into the company’s much loved range of flavours.
