Have you ever wondered how cheese companies remain so consistent or how they age their cheese to perfection? Well it all comes down to the cheese barista. That’s right, someone spends the daily grind just tasting cheese. Beats office life right?
“You have to be truly passionate about it,” says Warrnambool cheese barista, Dave Mellor. A cheese barista lives and breathes cheese, with a typical day consisting of eating up to 200 varieties. It’s much like wine tasting in the way that you taste the cheese and then spit it out. “ I couldn’t possibly eat every variety I sampled. I would have had a heart attack by now,” says Mellor.
Although cheese sales seem to be unwavering, with 99 per cent of households putting it in their trolley, cheese baristas are a dying breed. “No one believes that a job like ours would exist. The people in the business are gradually coming to retirement age and we have no one ready to train up,” says Mellor.
Unfortunately for coffee lovers, this role is not for you. Your daily caffeine hit can numb your tastebuds for up to hour after drinking, meaning you can wave goodbye to your cheese-tasting sense. But if you can throw away the coffee and follow your dreams, there’s just one more test to pass. You need to be a ‘supertaster’. The average person has around 25 papillae on a 7mm section of their tongue, whereas a supertaster (around 25 per cent of the population) is considered to have 30-35.
