Enjoy lunch and learning at Margan Restaurant in the Hunter.

Two of Sydney’s most talented, experienced and highly regarded culinary stars are taking their knowledge and passion on the road.

Those lucky enough to benefit from Alessandro and Anna Pavoni’s travels will be guests at this year’s Hunter Culinary Association Spring Seasonal Lunch at the acclaimed Margan Restaurant in Broke.

The Pavonis, who operate four successful Sydney venues, Ormeggio at the Spit, Via Alta, Sotto Sopra and Chiosco by Ormeggio, will share their knowledge with up-and-coming apprentice chefs, association members and guests, before diners enjoy a three-course lunch from Margan head chef Thomas Boyd accompanied with premium Margan wines.

Alessandro’s pre-lunch demonstration will see him prepare Italian cuisine with his trademark love of contemporary flavours, techniques and textures, and passion for safeguarding Italian culinary culture.

Anna, a founding board member of Women in Hospitality, will share her back-of-house experiences across four venues, her passion for customer service, and the “business of business”.

“Alessandro and Anna have an incredible depth of invaluable industry knowledge and experience that can only be learned and accumulated through hard work, passion and dedication – not to mention talent and a love for Italian cuisine,” says Hunter Culinary Association chairman Gus Maher.

“HCA workshops are aimed at educating apprentices, members and guests. This type of industry exposure can make a huge difference to a young chef’s career development.”

The Spring Seasonal Lunch takes place on November 12 at Margan Restaurant, 1238 Milbrodale Road, Broke. Alessandro and Anna’s demonstration starts at 10.30am, with lunch from 11.30am to 3pm. Tickets are $100 for HCA members, $130 for non-members and $30 for apprentice chefs.
