What is garbage bread and why is it the supreme Super Bowl snack?

Australians are quickly getting on the Super Bowl bandwagon, and with that comes all of the game day food we’ve been waiting for.

The latest player on the field is the charmingly named Garbage Bread and the not-pizza-not-burger is the kind of Franken-food we can get behind.

The savoury scroll is called Garbage Bread not because it belongs in the bin, but because you can throw basically anything into it.

The classic version is made from pizza dough stuffed with burger ingredients like beef mince, onion, bacon and cheese, but there are no hard and fast rules. Pepperoni and vegetables are also welcome.

If you need some inspiration, the internet’s favourite nonna, Barbara “Babs” Costello @lunchwithbabs has shared her recipe for the world to enjoy.

Babs starts by laying a pizza dough onto a rectangular sheet pan, and topping it with mince, onions, bacon, cheese and mixed Italian herbs before rolling the whole thing up and baking until crisp and golden. Yum.

How to make Garbage Bread

Ingredients

500g beef mince
1 large onion, diced
200g bacon, diced
1 ½ cups grated cheddar cheese
400g pizza dough
1 tbsp burger seasoning of choice
1 egg, beaten

Method

  1. On medium heat cook your bacon until crisp, then brown the beef mince and diced onion in the rendered bacon fat.
  2. Once browned, drain the fat from the mince mixture and add the bacon back to the pan along with the mince, onions, burger seasoning and 1 cup of grated cheese.
  3. Roll your pizza dough out onto a baking tray so it’s about ½ cm thick and top with the mince mixture in an even layer, then sprinkle with remaining cheese.
  4. Gently roll the pizza dough over, carefully tucking enclosing the mince mixture to create a scroll.
  5. Brush with egg wash and bake for 20-25 minutes at 180 degrees, until golden and crisp.
  6. Slice into cylinders and serve with Big Mac sauce.
