Like many of us, Perry has fond memories of DJs from his own childhood. “I remember coming to town in the late 1960s and walking through the David Jones Foodhall,” he says. “It was the pre-eminent food experience in the country.” The new concept will blur the line between service and retail. You could eat a steak, discuss the meat with the butcher, then buy the same cut as well as the knife and butcher’s block.
