Hold up, Rene Redzepi. You may have won best restaurant in the world four times over, but according to local health laws, you’re not quite ready to open a restaurant in Australia yet.
NOMA’s entire Danish team has had to enroll in TAFE for a briefing in food safety and service of alcohol in preparation for the NOMA Barangaroo pop-up opening on January 26 this year.
TAFE Western Sydney is obviously chuffed to be delivering the training on Monday, January 18, sending out a press release to media with the following statement:
Western Sydney Institute Director Robin Shreeve said that he was very pleased that his organisation could support Noma in Australia.
“We have been able to adapt training and delivery so that it is a perfect fit for more than 20 Noma staff members, who are located close to the Barangaroo Skills Exchange training facility managed by TAFE Western Sydney,” he said.
“The training means that Noma will be compliant with NSW regulations relating to food safety and service of alcohol.”
Tickets for the pop-up sold out in 90 seconds (that’s 5,600 pre-paid seats in total), but buzz is still growing. You can still walk in to the new 108 sister pop-up, or stalk Rene Redzepi’s instagram for an insider-look. Expect to see interesting seaweeds, abalone, finger lime, coast fig and plenty of crabs highlighted.
