The Flinders Wharf have announced a monthly guest chef program dubbed ‘On Island Time.’ The concept will see two guest chefs invited to the beautiful Flinders Island, where they’ll spend four days diving, foraging, hunting before serving up their own menu for the weekend. The visiting chefs for September are James Viles and Ryan Kovac, as they bring Bertha’s Meats and American-style barbecue techniques to the islands unique produce including wallaby and saltbush lamb. Island locals Tom and Jo Youl offer boutique accommodation including Killiecrankie Beach House and The Cray Shack which also offer food and catering services.
