Chef-restauranteur Shane Delia is inviting promising young talent into the kitchen at Maha Bar over the next month to showcase the evolution of Middle Eastern cuisine. The Collingwood venue will host four of Australia’s top emerging chefs, Ben Williamson (Agnes), Paul Farag (Nour), Adam Wolfers (Gerard’s Bistro) and Tom Sarafian (Little Andorra), presenting their signature dishes and bespoke culinary creations that celebrate classic Middle Eastern flavours and high-quality Australian produce. Leigh McDivtt and Edouard Delefortrie will work under longterm Bistro Rex Executive chef, Jo Ward, combining their experience of classic French cooking and flavours with fresh techniques and “neo-Bistro” fun. Veuve Clicquot has named Alanna Sapwell as the first Australian to join its international culinary community, the ‘New Makers’.
