Cheeseburger pies
“We take dishes that we think are delicious and transform them into pie form. We come up with a brand new pie every week. We love pies. We live and breathe the pie life! One idea that Scott had been flirting with, but wasn’t sure about, was a pie inspired by the McDonald’s Big Mac. Was it a betrayal of his fine-dining culinary roots and aspirations? Or was it just a bloody good idea? We launched the Big Thief Burger Pie as our pie of the week. It. Went. Bonkers.” – Aaron Donato and Scott Blomfield from Pie Thief, Vic

Bacon and mushroom garlic bread
“Back in our uni days, my brother, Sharon [Khoo’s wife] and I used to order a lot of cheap home delivery pizza, but we didn’t like their garlic bread. Instead we’d get frozen garlic bread from the supermarket. One day I layered it with mushrooms, cheese and bacon, and we never looked back.” – Junda Khoo

New York’s finest hot dog
“Hot dogs got their start in the 1860s, when German migrant Charles Feltman started slinging them in a pushcart on Coney Island, giving rise to an Americana favourite. A classic New York dog – affectionately known as ‘dirty water dogs’ for the salt- and fat-licked cart water they’re warmed in – is a relatively simple affair compared to other American city standards: an all-beef frankfurter in a soft warm bun with a handful of tangy kraut and spicy brown mustard. The defining addition, for many, are sauteed onions, deliciously heightened with sweet ketchup and spices.” – Yasmin Newman. Choose-your-own-adventure loaded banh mi
“My take on banh mi here encourages you to ‘choose your own adventure’, so to speak. In addition to the filling options below, you can also try lemongrass pork burgers, beef or shredded leftover roast chicken, such as the tom yum chicken recipe (see notes). A good banh mi should be loaded – by which I mean you must be generous with the fillings. Don’t be shy with meat, fish finger or chicken quantities, and stuff the sandwich with vegetables and herbs until it’s bursting at the seams. Finish off the sandwich with as many condiments as you can dream up: extra dollops of sambal or sriracha and more mayonnaise, always more mayonnaise.” – Lara Lee
Crispy yuzu fried chicken
"This chicken recipe means a lot to me. I couldn’t have figured out this recipe without the expertise of the Chinese chefs I worked with in the past. Many different tests, without a word of English coming back, but their skill on the wok and playing with different ratios to get it just right." - Chase Kojima
