In the wake of The World's 50 Best Restaurants, we're celebrating all things Melbourne. So, what better way to sample the true taste of Australia's culinary mecca than with a dinner at Pope Joan. The second pairing in our exciting monthly series of delicious. dinners sees Pope Joan owner Matt Wilkinson team up with Embla and Town Mouse head chef Dave Verheul. We’re teaming two of Melbourne’s brightest culinary stars for the second of our Take Two Chefs collaborations. Joining Pope Joan owner and delicious. contributor Matt Wilkinson in the kitchen of his Brunswick East restaurant is Dave Verheul, the highly regarded head chef at Carlton’s The Town Mouse and Embla, in the city’s CBD.
This is a double act that’s sure to deliver, with Matt kicking the evening off with his miso radishes, while Dave delivers whipped cod roe and herbs de provence.
The pair then alternate entrées. Matt’s potato and rosemary bread is up first, followed by Dave’s snapper carpaccio and sour peppers. Matt then serves his calamari with salted cucumber and sour curd. And finally, it’s Dave’s stracciatella with green tomatoes and olives. That’s four dishes right there to get us excited!
And as if that’s not enough, for mains, guests will tuck in to Matt’s chicken bits and bobs salad and a dish of Black Angus flank, romano beans and tarragon from Dave.
Dessert comes courtesy of Matt, in the form of his grilled strawberry and peach mess. This wonderful menu will be accompanied with matching beverages.
