Davies will take you on a journey through the best of Italian cuisine from veal tongue with anchovy and tuna mayonnaise – his update on the classic vitello tonnato – creamy chicken liver spiked with Fernet-Branca liqueur and house-made bell-shaped campanelle pasta tossed with smoked eel, peas and chilli through to crisp Boston Bay pork rack served with root vegetables. All courses have been matched with the best Italian varietals from South Australia, New South Wales and, of course, the motherland.
