Chef Massimo Mele's top 11 food joints from Bali to LA

The Sydney chef, who owns Massimo Mele Catering, shares his top global food destinations, from Naples to NYC.

Top tipple?
Rock Bar at the Ayana Resort and Spa Bali in Uluwatu has the best Bloody Mary topped with a cooked prawn. The bar perches on top of the cliffs and overlooks the surf break.

Best for seafood?
Noryangjin Fish Markets in Seoul – so much seafood under one roof and the variety is mind-blowing.

Best meal off the beaten track?
One of my favourite restaurants is in Capri at the boutique hotel Villa Brunella. It’s a 20-minute walk from the main piazza and a bit tricky to find, but once you do, it’s well worth it! The view is spectacular and the spaghetti all’astice (with lobster) is one of the best you’ll ever eat.

Best place for bread?
Whenever I go to San Francisco, I visit Tartine Bakery & Cafe for their incredible cake aux olives.

Best place for cheese?
As a kid, living in Naples, we used to drive south to Calabria for holidays. On the way we’d stop at a trattoria in the town of Battipagila where all the ricotta, buffalo mozzarella and burrata were made out the back.

Best small bites?
If you want to pick at delicious food and drink great wine in LA, then Osteria Mozza is the spot.

Best for satisfying sweet cravings?
Sydney’s famous Gelato Messina. I love the Bondi store – there’s nothing better after a day at the beach than a white chocolate and salted caramel gelato.

Most memorable meal?
On my last trip to New York I was lucky enough to dine at three Michelin-starred Per Se. The level of detail was impeccable in all 20 courses, as well as the service. It was flawless.

Best place to impress?
Taverna Trilussa Roma in Italy is one of the most romantic places I have dined with its candle-lit terrace. The bucatini all’amatriciana is one of Rome’s most famous dishes, spaghetti served with a simple tomato sauce, bacon and mounds of pecorino.

When I don’t feel like cooking…
I jump on a plane and head to Tasmania, where my parents live, for Mama Maria’s cooking.

Where I want to eat next…
Marea in New York. I am a big fan of Chef Michael White’s flavourful Italian dishes.
