One of London’s top chefs shares his favourite culinary locations, both here and abroad.
Best for cheese?
I get very positive cheese vibrations from Australia, but I have not seen any shops like our Neal’s Yard Dairy in London.
Best for seafood?
Noosa.
Favourite Australian restaurant?
I love Cumulus Inc. in Melbourne. Offering Andrew McConnell’s stylish food, such as a classic heirloom beetroot salad, it’s just a splendid place.
Best for fresh produce?
Fratelli Fresh in Sydney. It’s a wonderful place to pick up fresh fruit and veg, plus Italian dry goods. It also houses the marvellous Cafe Sopra – everything you could wish for under one roof.
Best butcher?
I like Victor Churchill in Sydney – a very smart butcher where you can find a lot of marbled wagyu beef.
Best to impress?
Tetsuya’s in Sydney. Tetsuya Wakuda should win the prize for the world’s most congenial chef – now that’s impressive.
Best small bites?
The European in Melbourne. Executive chef Ian Curley has such simple things as croque monsieur all sown up.
The best hidden find?
Siglo Bar in Melbourne. It’s a rooftop bar located above The European with views over Parliament House. It’s open at very considerate times and has good cigars and great wine. There should be one on every roof.
My top choice for a tipple…
Is Gerald’s Bar in Melbourne’s Carlton North. It offers a laid-back atmosphere and owner Gerald Diffey is a fine host.
Most memorable meal?
Cafe Di Stasio in Melbourne. It’s a great place to sit outside and watch life go by, while owner Ronnie Di Stasio converses in some form or another. My business partner, Trevor, and I also enjoyed a very bonny lunch at Neil Perry’s smart Rockpool Bar & Grill in Sydney.
