After first getting a taste of kitchen life doing work experience at Vue de monde as a 14-year-old, Liam Spurrell swapped a life of putting pretty little leaves on plates for a life of finding those pretty little leaves.
“I was always foraging for the restaurants I worked for. I realised there was a void in the market for wild foraged produce,” Liam says.
And so Spurrell Foraging was formed.

Spurrell now supplies many of the top-tier restaurants in Melbourne with their salt bush and pig face and wild fennel and other artful leaves and flowers and has recently expanded to Sydney. He’s also starting to work with gin companies and selling to cocktail bars.
This dynamic young producer has just bought 7ha in Silvan in the Dandenong Ranges to start expanding growing Australian native plants to expand the business further.
