The finest dining menus will have a new star this spring, but not for long.
The latest crop from Tasmanian White Asparagus (a 2023 delicious. Harvey Norman Produce Awards winner) has come into season, and the fine dining scene is rushing to add it to their menus. But don’t wait to try it – the season for white asparagus only lasts around 5 weeks.
Sweeter and earthier than the green variety, this premium veg will be available in three varieties never before seen in Australia.
Tasmanian White Asparagus was awarded the Unearthed Next-Gen Producer award, with the country’s top chefs praising them for their never-before-seen (in this hemisphere, at least) product.
“Richard Weston and Tom Barham’s Tasmanian White asparagus is truly a standout,” said Peter Gilmore, a national judge of the Produce Awards. “The flavour and texture are incredible; you can really taste the terroir of the sweet Tasmanian soil. The five-year journey of traditionally growing this produce was well worth it for this amazing result.”
