15 minute ham, pinenut and bean salad
Ingredients (10)
- 1 pack sliced ham
- 440g tin of Butter Beans – rinsed & drained
- 200g Green Beans
- 200g Yellow Beans
- 2 Tbsp Italian Parsley – roughly chopped
- 80g Pinenuts – toasted
Dressing
- 2 Tbsp Virgin Olive Oil
- 1 Tbsp Lemon Juice
- 1 Tbsp Red Wine Vinegar
- 1 Tsp finely grated lemon rind
Method

1.Blanch beans in boiling water 3 – 4 minutes, refresh under cold water & drain. Add all ingredients, except ham, in a large bowl. To make dressing – mix olive oil, lemon juice, red wine vinegar & lemon rind together. Toss salad well with dressing. Arrange salad on a serving platter and fold ham slices around the edges.
