3-holes vegan chocolate cake
Its always handy to have a few trusted vegan recipes up your sleeve, even if you’re not even vegetarian – cooking for loved ones is about making people feel welcome, and being considerate of everyone’s needs. So if someone needs their food to be vegan, that’s perfectly okay with me, so long as I know some good recipe tricks. (This, by the way, is so easy and so yummy that it’s my go-to chocolate cake anyway, with or without vegan friends coming over.) Why ‘3-holes’, you ask? Please read on…
Ingredients (15)
- 200g self-raising flour
- 100g soft brown sugar
- 100g sugar
- 50g dutch (unsweetened) cocoa powder, sifted
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 120g dairy-free margarine, melted
- 2 tablespoons white or apple cider vinegar
- 1 teaspoon vanilla extract
- 150ml soy milk or other non-dairy milk substitute
- Strawberries, raspberries or blueberries, to serve (optional)
Icing
- 300g icing sugar
- 150g dairy-free margarine
- 2 tablespoons glucose syrup (optional)
- 1 teaspoon boiling water

1.Preheat the oven to 150°C. Line a 22 cm round cake tin with baking paper.

2.In a large bowl, mix all the dry ingredients together well to combine.

3.Make 3 holes in the mixture: 1 large, 1 medium and 1 small hole. Into the large hole, add the melted margarine. Into the medium hole, add the vinegar. Into the small hole, add the vanilla. Pour the soy milk all over the top, then mix the whole lot together until there are no lumps.

4.Pour the batter out into the cake tin and bake for 18–20 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool completely in the tin. (Trying to take it out earlier will result in the cake breaking!)

5.Make the icing by mixing everything together in an electric mixer until smooth. Spread over the top of the cooled cake and decorate with berries, if desired.
