5-minute pistachio and chocolate mug cake
This is your ‘I’m suddenly craving a warm chocolate dessert’ solution. The pistachio cream adds the perfect gooiness to a warm fluffy chocolate cake. The scoop of ice cream perfectly tops it all off, but feel free to go with whipped cream or a rich dollop of double cream instead.
You’ll need a 1⅓-cup (330ml) capacity microwave-safe mug for this recipe.
Ingredients (7)
- 1/4 cup (35g) Woolworths Essentials Self Raising Flour
- 1 1/2 tbs baking cocoa
- 3 tsp caster sugar
- 1/4 cup (60ml) milk
- 1 1/2 tbs light olive oil (or vegetable oil)
- 1 tbs pistachio spread
- Vanilla ice cream and chopped pistachios, to serve

1.Mix the flour, cocoa and sugar thoroughly with a fork in a 1 1/3-cup (330ml) capacity microwave-safe mug. Add the milk and oil and mix with a fork until thoroughly combined. Drop the pistachio spread into the centre of the mug and slightly push into the batter. Microwave on high for 1 minute 30 seconds.

2.Serve immediately with a scoop of ice cream and a sprinkle of chopped pistachios.
Recipe Notes
Recipe notes: The trick is to whisk the dry ingredients well with a fork to make sure they are thoroughly combined and then again after adding the milk and oil. The shape of the mug can make it harder to mix the ingredients at the bottom of the mug, so make sure that all your ingredients are well combined before cooking.
This dessert is best served while still hot. The cake will become firmer when it cools, as the residual heat will continue to cook the cake.
