Almond, maple and cranberry chewy granola bar
Jordan Miller of Sonoma shares this granola bar recipe which makes use of basic pantry staples. Begin this recipe at least 6 hours ahead.
Ingredients (12)
- 1/2 cup (80g) whole blanched almonds
- 1/2 cup (80g) almonds, skin on
- 260g rolled oats
- 450g pitted dates
- 2 tsp coconut oil or olive oil
- 1/2 cup (140g) peanut butter or almond butter
- 150g maple syrup
- 40g runny honey
- 100g dried fruit (such as cranberries, raisins or sultanas)
- 2 tsp ground cinnamon
- 2 tsp vanilla extract
- Zest of 1 orange

1.Preheat oven to 180°C. Grease the base and sides of a 20cm x 5cm deep square baking pan and line with baking paper.

2.Roast almonds and oats on separate trays, tossing occasionally, for 8-10 minutes until golden. Set aside to cool.

3.Meanwhile, place the dates in a food processor and pulse, scraping down the sides occasionally until you get a semi- smooth paste (you can leave small chunks).

4.Combine the oil, nut butter, maple syrup and honey in a medium saucepan over medium-high heat and cook, stirring frequently, for 2-3 minutes until combined. Stir in the date paste and cook, stirring, for 2-3 minutes until date paste is melted and combined. Remove immediately from the heat. Set aside and keep warm.

5.Place dried fruit, roasted oats and almonds, cinnamon, 1 tsp sea salt, vanilla and orange zest in a large heatproof bowl and stir to combine. Add the date and nut butter mixture and, using a rubber spatula, stir until well combined.

6.Press the granola mixture into prepared tray. Cover and refrigerate for 6-8 hours to fully set. Flip onto a cutting board and cut into desired shapes or sizes to serve.
