Iced tea is an American tradition dating back to the St Louis World Exposition of 1904. On a sweltering day, a tea vendor was trying to sell his hot tea to the crowd, when he had a stroke of genius. He added some ice cubes, the crowd responded and an American classic was born.Meanwhile, sun tea is from the Southern states, where tea was set out on the porch in summer to gently brew in the sun. Traditionally, orange pekoe tea is used, then flavoured with citrus, mint and sugar.
Ingredients (3)
- 1 heaped tbs orange pekoe tea leaves
- 1 tsp jasmine tea leaves
- Orange and lemon slices, mint leaves and sugar, to serve

1.Place the tea in a large clear container with 2L (8 cups) fresh cold water. Cover and leave in the sun for 3-4 hours. Strain, then flavour with orange and lemon slices and mint. Sweeten to taste and serve over ice.
