Aperol spritz orange ice cubes

This mimosa-inspired version of the classic Aperol spritz features a refreshing frozen sphere of orange juice, topped with a green leaf for extra visual effect!

You’ll need sphere ice cube trays for this recipe. They’re available at supermarkets and kitchen and homewares stores

Aperol spritz orange ice cubes

Ingredients (4)

  • 2 cups (500ml) orange juice
  • 1 tbs olive brine (from a jar of green olives)
  • 6 small citrus leaves (or bay leaves)
  • Aperol and chilled prosecco or sparkling white wine, to serve

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Mix the juice and brine in a jug, then pour into the sphere ice cube tray. Arrange a small citrus leaf into the hole at the top of each sphere. Freeze until set.
  • 2.
    To serve, place an orange ice cube in a glass. Add a little Aperol, then top up with chilled prosecco or sparkling white wine.
