Apple and elderfower Collins
Apple and elderfower Collins
Cool off and drink up with this light aperitif.

Ingredients (5)

  • 5 Granny Smith apples, plus thin wedges to garnish
  • Finely grated zest of 1 lemon
  • 25ml gin and Campo de Encanto Pisco* (see note)
  • 25ml elderfower liqueur* (see note)
  • 25ml lemon juice

Method

  • 1.
    Juice the apples and add lemon zest. Transfer to a jug and chill for 30 minutes to allow the juice and froth to separate. Strain the juice through a folded muslin cloth or a fne sieve, stopping before you get to the cloudy juice. Chill until needed.
  • 2.
    To make the cocktail, place the remaining ingredients with 50ml clear apple juice in a cocktail shaker flled with ice. Shake, then strain into a tall glass flled with ice. Garnish with apple wedges.
