Arrabbiata souffle frittata
Got eggs? You've got yourself a meal. Warren Mendes shows you how to turn a carton of eggs into something everyone at the table will love.
Ingredients (7)
- 2 tbs olive oil
- 1 onion, thinly sliced
- 2 long red chillies, seeds removed, thinly sliced, plus extra to serve
- 80g hot salami, thinly sliced
- 200g punnet grape tomatoes, halved
- 8 eggs, separated
- 1/4 cup (60g) sour cream, plus extra to serve rocket leaves, to serve

1.Preheat the oven to 200°C.

2.Heat oil in a large oven proof fry pan over medium heat. Add the onion and cook, stirring, for 4 minutes or until soft. Add chilli and salami, then cook for 2 minutes or until fragrant. Add tomato and cook for a further 2 minutes or until slightly softened. Season, then remove from the heat.

3.Whisk the yolks and sour cream in a bowl until combined. In a separate bowl, whisk the egg whites to soft peaks using electric beaters, then gently fold into the sour cream mixture. Pour over the tomato mixture in the pan.

4.Transfer pan to the oven and bake for 15 minutes or until set and golden. Cool slightly, then invert onto a plate.

5.Serve the frittata topped with the rocket, extra chilli and sour cream.
