Give an Asian twist to this winter warmer of slow-cooked beef.
Ingredients (13)
- 1L (4 cups) beef stock
- 1 tbs crushed Szechuan peppercorns
- 4 star anise
- 4 cinnamon quills
- 2 tbs grated fresh ginger
- 200ml soy sauce
- 1/3 cup (80ml) dark soy sauce
- 2 small red chillies, split lengthways
- 3/4 firmly packed cup (150g) brown sugar
- 2kg beef chuck steak, cut into 4cm cubes
- 2 lapsang souchong tea bags
- Steamed rice, to serve
- Coriander sprigs and long red chilli, sliced, to garnish

1.Place stock and 1 litre water in a large pan. Add remaining ingredients, except tea bags, bring to the boil over high heat, then cover and simmer over medium heat for 2 hours.

2.Add tea bags and simmer for 30 minutes until beef is very tender. Remove the tea bags.

3.Serve the beef with rice, garnished with coriander and chilli.
