Asian slow-braised beef
Give an Asian twist to this winter warmer of slow-cooked beef.

Ingredients (13)

  • 1L (4 cups) beef stock
  • 1 tbs crushed Szechuan peppercorns
  • 4 star anise
  • 4 cinnamon quills
  • 2 tbs grated fresh ginger
  • 200ml soy sauce
  • 1/3 cup (80ml) dark soy sauce
  • 2 small red chillies, split lengthways
  • 3/4 firmly packed cup (150g) brown sugar
  • 2kg beef chuck steak, cut into 4cm cubes
  • 2 lapsang souchong tea bags
  • Steamed rice, to serve
  • Coriander sprigs and long red chilli, sliced, to garnish

Method

  • 1.
    Place stock and 1 litre water in a large pan. Add remaining ingredients, except tea bags, bring to the boil over high heat, then cover and simmer over medium heat for 2 hours.
  • 2.
    Add tea bags and simmer for 30 minutes until beef is very tender. Remove the tea bags.
  • 3.
    Serve the beef with rice, garnished with coriander and chilli.
