There’s something so satisfying about making your own ice cream, particularly when it’s as delicious as this one. The combination of the coconut, avocado and lime is absolutely magical, and it's so simple, even the kids can make it. Recipe by Louise Fulton Keats.

Ingredients (4)

  • 1 x 400ml tin coconut cream
  • 1 large ripe avocado
  • 60 g (1/3 cup) icing sugar
  • 1 lime, zest finely grated, plus extra zest to serve (if liked)

Method

  • 1.
    Pour the coconut cream into an ice cube tray and place in the freezer for several hours until frozen solid.
  • 2.
    Scoop the avocado flesh into a high-powered blender (or Thermomix). Add the icing sugar, lime zest and the frozen coconut cream cubes and blend for about 30 seconds or until smooth and creamy. Scrape down sides and blend for a further 15-30 seconds if needed.
  • 3.
    Serve immediately or return to the freezer for 1-3 hours to firm to your liking. Serve as is or sprinkled with extra lime zest.
