This retro, bite-sized starter combines sweet, salty and savoury in the most beautiful way.

Ingredients (6)

  • 50g manchego cheese, cut into 24 small batons, plus extra if needed
  • 24 pitted prunes
  • 2 rosemary sprigs, leaves picked, finely chopped
  • 12 (240g) rashers streaky bacon, halved
  • 1/3 cup (80ml) sherry vinegar
  • 2 tbs brown sugar

Method

  • 1.
    Carefully push the cheese into the hole left in the prunes from the pit. Sprinkle the rosemary over the bacon and wrap around each prune to enclose. Place in a small high-sided baking tray lined with baking paper and refrigerate until ready to cook.

    Preheat the oven to 200°C. Roast the prunes for 15 minutes or until the bacon is starting to brown.
  • 3.
    Meanwhile, place the vinegar and sugar in a small saucepan over high heat and stir until the sugar dissolves. Bring to the boil and cook for 2 minutes. Pour mixture over the prunes and roast for a further 10 minutes, then turn and baste. Roast for a further 5 minutes or until sticky and golden. Serve immediately.
