Bagels with smoked salmon slices
Salmon and bagels are a perfect match - enjoy these for brekky, lunch or even a light dinner.
Ingredients (9)
- 2 x 125g tins salmon slices
- 1 small red onion, finely chopped
- 2 tbs baby capers, rinsed, drained
- 1 roasted red capsicum, finely chopped
- 2 tbs chopped flat-leaf parsley leaves
- 1 tbs lemon juice (or to taste)
- 4 bagels
- 125g cream cheese
- 4 small butter lettuce leaves
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Drain the salmon, reserving the oil. Place the oil in a bowl with the onion, capers, capsicum and parsley. Season the dressing, add the lemon juice to taste and set aside.

2.Halve the bagels and grill the cut sides. Spread the bottom half of each bagel with the cream cheese, top with a small lettuce leaf and lay the salmon slices on top. Drizzle with the dressing and top with remaining bagel half.
