Ingredients (6)
- 250g packet smoked diavoletti cheese (see note)
- 1-2 tbs extra virgin olive oil
- Large handful pitted Sicilian (green) olives, halved
- Large handful of sundried cherry tomatoes
- Basil leaves, to serve
- Bread, to serve (optional)

1.Preheat oven to 200°C/180°C fan-forced.

2.Cut each diavoletti into four pieces and place in a medium cast iron or ovenproof frypan. Drizzle with oil and bake for 5 minutes, or until melted.

3.Serve immediately, topped with olives, sundried tomatoes and basil, along with bread, if using.
Recipe Notes
Diavoletti, meaning ‘little devils’, is an Italian round-shaped cow’s milk smoked cheese with a chilli-stuffed green olive at its centre. It’s available from specialty cheesemongers and Italian delis. You can substitute smoked scamorza and some sliced long red chilli.
