Baked quince
This tart fruit is taken to the next level when it's baked. You can use this recipe for an array of desserts, like in Tilly's chocolate and quince cake (pictured, see notes).
Ingredients (6)
- 4 quinces, peeled, cored and cut into sixths
- Juice of 4 oranges, plus 3 long strips of zest
- 1/2 cup (110g) caster sugar
- 1 cinnamon stick
- 2 star anise
- 1 vanilla bean, split and scraped (or 2 tsp vanilla bean paste)

1.Preheat oven to 170°C/150°C fan-forced. Place quince wedges, orange juice and zest, sugar, cinnamon, star anise and vanilla in a baking dish and toss to combine. Arrange quince slices in a single layer and cover dish with foil.

2.Bake in the oven for 2 1/2 to 3 hours until the fruit is beautifully ruby and tender. I like to turn the quince slices once or twice during this time and check that there is still enough liquid in the dish – add a little more orange juice or a splash of water if it’s looking a little dry. Allow to cool, covered, before using.
Recipe Notes
Allow quince to cool, covered, in the dish before using. You won’t need all the quince for the chocolate cake. Store any leftovers in an airtight container in the fridge and eat within 3-4 days.
