Baked snapper
Ingredients (5)
- 4 whole pink snappers
- 1 tbs olive oil
- 3 cloves garlic, thinly sliced
- 5 cm piece ginger, thinly sliced
- Thinly sliced spring onion, coriander sprigs and lime, to serve
Method

1.Preheat oven to 180°C and grill to high. Line 2 baking trays with baking paper. Rinse fish and pat dry with paper towel and transfer to baking trays.

2.Cut slashes into thickest part of fsh, for even cooking. Drizzle with half the oil and season. Grill for 2-3 minutes each side, swapping trays, or until golden. Transfer to oven and bake for 8-10 minutes or until tender.

3.Meanwhile, combine garlic and ginger with remaining oil and lay on a separate tray. Grill for 2 minutes until golden.

4.Transfer fish to a platter. Top with garlic, ginger, onion and coriander. Serve with lime.
