For the ultimate potato side dish, try adding a splash of balsamic vinegar and fresh thyme.

Ingredients (6)

  • 100g unsalted butter
  • 2 tablespoons olive oil
  • 1.3kg waxy potatoes (such as kipfler), cut into 2cm pieces
  • 2 red onions, finely chopped
  • 2 tablespoons chopped fresh thyme leaves
  • 175ml balsamic vinegar

Method

  • 1.
    Preheat oven to 170°C. Melt butter and oil over medium heat in a large baking dish or ovenproof frypan, add potato and onion and cook, stirring, for 10-15 minutes until starting to soften and turn golden. Season with salt and pepper, and add thyme and half the vinegar.
  • 2.
    Cover with foil and place in oven for 20 minutes. Remove foil, add remaining balsamic and return to oven for a further 20-30 minutes until golden and cooked through.
