You’ll go bananas for this smooth and creamy concoction. We’ve taken the rich sweetness of a classic banoffee pie and transformed it into a cloud-like cold foam to crown your daily cold brew. And to top it all off, it comes with a caramelised banana garnish, for an extra layer of sticky-sweet perfection.

You’ll need a kitchen blowtorch for this recipe. 

Ingredients (7)

  • 1/2 banana
  • 2 tbs milk
  • 1/2 tsp vanilla bean paste
  • 1/2 tsp brown sugar, plus extra, to sprinkle
  • 1/4 cup (60ml) thickened cream
  • 200ml cold brew coffee
  • Ice cubes, to serve

Method

  • 1.
    Cut 2 slices of banana. Whiz remaining banana with milk, vanilla and sugar until smooth. Combine cream and banana mixture in a jug and whisk until foamy but still pourable.
  • 2.
    Press banana slices into extra sugar to cover 1 side and edges. Using a kitchen blowtorch, caramelise sugar. Arrange slices on a small skewer
  • 3.
    Pour coffee into a large glass with ice cubes. Top up with banana cream, and garnish with caramelised banana slices. Serve immediately.
