Barbecued duck salad
Restaurateur Jimmy Shu's Asian-style barbecued duck complimented by the oriental flavours in a fresh salad.
Ingredients (9)
- 1 1/2 tablespoons lemon juice
- 1 tablespoon fish sauce
- 1 teaspoon sesame oil
- 1 1/2 tablespoons finely grated galangal*
- 1 small red onion, halved, thinly sliced
- 1 tablespoon caster sugar
- 1/2 Chinese barbecued duck*, with skin, meat removed, sliced
- 6 butter lettuce leaves, to serve
- 1 small dried red chilli, crushed, and coriander sprigs, to serve

1.Place the lemon juice, fish sauce, sesame oil, grated galangal, red onion and caster sugar in a large bowl and stir to combine. Add the duck meat and toss gently to combine.

2.To serve, arrange the butter lettuce leaves on a serving plate and top with the duck salad. Sprinkle with crushed chilli and coriander sprigs.
