Restaurateur Jimmy Shu's Asian-style barbecued duck complimented by the oriental flavours in a fresh salad.

Ingredients (9)

  • 1 1/2 tablespoons lemon juice
  • 1 tablespoon fish sauce
  • 1 teaspoon sesame oil
  • 1 1/2 tablespoons finely grated galangal*
  • 1 small red onion, halved, thinly sliced
  • 1 tablespoon caster sugar
  • 1/2 Chinese barbecued duck*, with skin, meat removed, sliced
  • 6 butter lettuce leaves, to serve
  • 1 small dried red chilli, crushed, and coriander sprigs, to serve

Method

  • 1.
    Place the lemon juice, fish sauce, sesame oil, grated galangal, red onion and caster sugar in a large bowl and stir to combine. Add the duck meat and toss gently to combine.
  • 2.
    To serve, arrange the butter lettuce leaves on a serving plate and top with the duck salad. Sprinkle with crushed chilli and coriander sprigs.
