This green machine is a starter that will stun on the table.

Ingredients (9)

  • 1 garlic clove, crushed
  • 1 anchovy fillet in oil, drained
  • 200g thick Greek yoghurt
  • 150g whole egg mayonnaise
  • 1 cup firmly packed parsley leaves
  • 1 tbs red wine vinegar
  • 1 cup basil leaves, plus extra leaves to serve
  • 2 broccoli heads, cut into large florets
  • 1/3 cup (80ml) extra virgin olive oil

Method

  • 1.
    To make the green goddess, place garlic, anchovy, yoghurt, mayonnaise, parsley, vinegar and basil in a blender and whiz until smooth. Season to taste.
  • 2.
    Heat a chargrill or frypan over mediumhigh heat. Place broccoli in a bowl and coat in oil.
  • 3.
    Place on the chargrill and cook for 8 minutes, turning once, until charred and tender (cover in the final 4 minutes of cooking if stalks are not tender yet).
  • 4.
    Spread green goddess onto a serving platter and top with broccoli. Scatter over extra basil and serve immediately.
