Basil pesto

Why buy this pantry staple, when you can whip it up at home? This easy pesto recipe is great through pasta, on sandwiches or straight from the jar.
Ingredients (7)
- 2 cups basil leaves
- 3/4 cup (60g) finely grated parmesan
- 2 tbs pine nuts, toasted
- 1 garlic clove, crushed
- 2 tbs red wine vinegar
- Juice of 1/2 lemon
- 1/2 cup (125ml) extra virgin olive oil, plus extra to top
Method

1.Place all ingredients and 1 tsp salt flakes in a food processor. Whiz until finely chopped and emulsified.

2.Place in a clean jar, top with a thin layer of oil, and store in the fridge to prevent oxidation.
