Beans and potatoes with herby butter
“A compound butter is a great way to use up old herbs as it can be frozen. Add extra spices like fennel seeds, to give it an extra boost, and mix and match your herbs,” says Pheobe Wood.
Ingredients (8)
- 250g unsalted butter, softened
- 2 garlic cloves, crushed
- Finely grated zest of 1 lemon
- 1/2 bunch chives, roughly chopped
- 2 tbs rosemary leaves
- 200g green beans, boiled
- 1kg chat potatoes, boiled
- Chopped parsley leaves, to serve

1.Combine butter, garlic, lemon zest and herbs in a bowl. Place on a sheet of plastic wrap and roll up to form a log. Slice large pieces and toss through hot vegetables such as beans, or boiled chat potatoes. Scatter over chopped parsley to serve.
