Ingredients (12)

  • 2 cups jasmine rice, rinsed and drained
  • ¾ cup (180ml) coconut milk
  • ¼ cup (60ml) oyster sauce
  • 2 tbs fish sauce
  • 1 tsp caster sugar
  • 100ml peanut oil
  • 3 garlic cloves, crushed
  • 2 tbs finely grated ginger
  • 700g beef rump steak (or Scotch or sirloin), fat trimmed, thinly sliced
  • 2 bunches (about 400g in total) broccolini, trimmed, stems cut in half crosswise)
  • 200g shiitake mushrooms, stems trimmed, quartered
  • Thai basil, roasted peanuts & sliced red chilli, to serve

Method

  • 1.
    Place rice, coconut milk and 2 cups (500ml) water in a saucepan, bring to the boil, then reduce to lowest temperature, cover and cook for 12 minutes. Remove from heat and, without uncovering, leave to steam for 10 minutes. Uncover, fluff up rice with a fork, then cover to keep warm.

    Combine oyster sauce, fish sauce, sugar and ¼ cup (60ml) water in a small bowl.
  • 3.
    Heat 1½ tbs oil in a wok or large frying pan to very high, add half the garlic, half the ginger, cook for 20 seconds, then add half the beef and stir-fry for 1½ minutes or until just cooked. Place in a bowl. Repeat.
  • 4.
    Heat remaining 2 tbs oil in wok, add broccolini and shiitake and stir-fry for 1-2 minutes until starting to char. Return beef and cooking juices to wok, toss to combine, add oyster sauce mixture and bring to the boil. Remove from heat and scatter with basil, peanuts and chilli. Serve with coconut rice.
