Ben's kiwi fruit mess

An Aussie take on the classic Eton Mess.
Ingredients (10)
- 3/4 cup (165g) caster sugar
- 3 large eggwhites
- 4 kiwi fruit, roughly chopped, plus 2 cut into wedges to serve
- Juice of 1/2 lemon
- Thinly sliced mint, to garnish
Mascarpone cream
- 3 tablespoons (1/4 cup) mascarpone cheese
- 3 tablespoons (1/4 cup) creme fraiche
- 1 tablespoon icing sugar, sifted
- 1 vanilla bean, split, seeds scraped
- Finely grated rind and juice of 1 lime

1.Preheat oven to 120°C. Line a baking tray with baking paper. With an electric mixer, beat 1/4 cup (55g) sugar and eggwhites until soft peaks. Gradually whisk in another 1/4 cup (55g) sugar until stiff and shiny. Dollop meringue onto prepared tray and bake for 1 hour until firm and dry (but not coloured). Cool in oven with door ajar. Whiz chopped kiwi, juice and remaining sugar in a food processor until smooth.

2.Combine cream ingredients in a bowl. Crumble meringue onto cream and stir to make a rough, creamy mix that holds its form. Fold in 2-3 tablespoons puree and spoon into glasses. Top with kiwi wedges and mint, then drizzle with more puree.
