Get maximum flavour out of few ingredients with this delicious Cajun-style fish.

Ingredients (7)

  • 4 x 180g blue-eye fillets, skin removed
  • 30g unsalted butter, melted
  • 2 tbs Cajun spice mix
  • 1/3 cup (80ml) olive oil
  • 800g sweet potato, cut into chips
  • 1 1/2 tsp caster sugar
  • Aioli, coriander leaves and lemon wedges, to serve

Method

  • 1.
    Brush fish with butter, season and dust with Cajun spice mix. Set aside for 30 minutes to marinate.
  • 2.
    Preheat the oven to 220°C, drizzle chips with 1/4 cup (60ml) oil, sprinkle with sugar and season with salt. Place on a rack set above a baking tray and bake, turning halfway, for 25 minutes or until crisp.
  • 3.
    Meanwhile, heat remaining 1 tbs oil in a frypan over medium-high heat. Cook fish, turning, for 6-8 minutes until cooked. Serve fish with chips, aioli, coriander and lemon wedges on the side.
